Pomegranate molasses dressing

A simple and versatile dressing that lets our peppery oil shine. The addition of
sweet and tart pomegranate molasses turns this into a super shiny affair that works a dream on just about any salad leaf (we love it on rocket with some parmesan or feta crumbled on top) or as a glaze drizzled over roasted veggies, fish or meat. Date molasses makes a great substitute — just add a touch more vinegar, as it's the sweeter of the two.

Ingredients

125ml extra virgin olive oil
100ml pomegranate molasses
25ml red wine vinegar
fine sea salt

Method

  1. Whisk all the ingredients together with ½ teaspoon of salt until emulsified, then whisk in
    60ml water to loosen (if using for a dressing).

Note: If you would like to use this as a glaze just leave out the water.
